Christmas Cookies

These classic christmas cookies are soft, rich and with a delicious vanilla flavor which makes them perfect for decorating or enjoying plain. They also freeze beautifully.
- 3 1/2 cups all purpose flour
- 1 tsp baking powder
- 1 cup white sugar
- 3/4 cup butter, soft but not melted
- 1/4 cup Shortening
- 1 Egg
- 3 Tbsp Vanilla
Cream butter, shortening, and sugar until light and fluffy.
Add egg and vanilla: mix well.
Gradually add flour and baking powder and mix until fully combined.
Wrap or cover the dough and refrigerate for at least 1 hour or even overnight.
Preheat oven to 350°F. Line baking sheets with parchment paper.
Roll the chilled dough out on a lightly floured surface to about 1/4 inch thickness. Cut with cookie cutters and place cookies onto prepared baking sheets.
Bake for 12-15 minutes, or until the bottoms are just set and lightly golden brown.
Transfer cookies to a cooling rack to cool completely.
