Delicious Yellow Cake Recipe

Today I am sharing my very first cake recipe! Suuper exciting huh?! My favorite absolutely delicious yellow cake recipe it is! One of my goals for 2020 was to develop a perfect, fool-proof vanilla cake recipe! It took many tries but I finally have what I was going for! A beautiful moist cake with the perfect texture!

I tried a few from scratch recipes and some doctored up box mixes. Did a little twisting here and then again there and for a time there was a loot of vanilla cakes around the house! haha This doctored up yellow cake is what I ended up with and it is my absolute favorite now! Definitely fool-proof and it’s got the texture I wanted and most importantly it is moist! No need to use any sugar syrup or anything to make it more moist. It is perfect just the way it is!

While doing my research on different cake recipes I also found that there is sort of this vibe going around on the internet, that you have to make a cake from scratch to be a “real” baker! lol

In my opinion, absolutely not! There are amazingly great and talented bakers out there that bake only from scratch but also others equally as amazing and talented inspirational bakers that use only doctored up cake mixes. So whichever you prefer, rock it!

You can pair this delicious yellow cake recipe with really any type of frosting or filling and make it your favorite! I filled it with my absolutely delicious cream cheese pudding. It is homemade and my favorite filling at the moment! I will for sure upload that recipe in the future sometime. So be on the lookout for that! It also is amazing with my raspberry filling.

You always want to make sure to let the cake cool off completely before you start decorating it. I actually like to make my cake layers at least a day in advanced but you can make it the same day if you prefer.

If you do want to make it in advance just let the cakes cool for about 5 minutes in the cake pan, remove the cakes from the cake pans and then wrap each cake layer in plastic wrap. Leave them out until they have cooled off to room temperature and then store them in the refrigerator or freezer. If you store them in the freezer just take them out and let them thaw almost completely before you start decorating.

Delicious Yellow Cake Recipe

Ingredients
  

  • cup sour cream room temp.
  • ½ cup buttermilk room temp.
  • ½ cup milk room temp.
  • cup vegetable oil
  • 3 eggs room temp.
  • 1 Tbsp vanilla
  • 1 Betty Crocker Yellow Cake Mix

Instructions
 

  • Preheat oven to 325° F and prepare two deep 8" cake pans (or 3 6" cake pans) by lightly greasing the sides with shortening and dusting with all purpose flour. Set aside.
  • In the bowl of a stand mixer whisk together all the wet ingredients until well combined.
  • Sift in the yellow cake mix and mix until just combined. The batter should be smooth and completely combined but do not overmix!
  • Evenly divide batter between your prepared cake pans and bake for 23-26 minutes.
  • When the cake is done, the top should spring back to the touch and when inserting a toothpick in the center it should come out clean with no wet batter.
  • Remove from the oven, go around the sides with a small offset spatula to separate the cake from the pan but not removing it from the cake pan just yet.
  • Allow cakes to cool in the cake pans for about 5 minutes, then carefully flip the pans and remove the layers from the cake pans onto a cooling rack to cool completely before decorating.
