Pink Lemonade Pudding Recipe

This Pink Lemonade Pudding tastes so delicious and has such a smooth texture! This is also such an easy recipe to make and can we talk about that beautiful color!? I just think it has such a beautiful color and I didn’t use any food coloring. It got the color just from the pink lemonade powder.

I’m not a very big fan of anything lemon (oops) but this pudding was absolutely delicious! I tried it thinking it would probably be to sour or something and I wouldn’t like it but turned out it was just perfect!

I made this Pink Lemonade Pudding to go with my Strawberry Cake Recipe. It was the perfect match!

I used Pink Lemonade Powder for this recipe but if you only have the other normal yellow lemonade powder available that will also work great!

To get the smooth and silky texture for this pudding I like to mix all ingredients except the cornstarch and water and bring it to a boil. Constantly stir it so it won’t burn. Once the mixture starts boiling I remove it from the oven.

I mix my cornstarch and water to make a slurry. I actually like to have this ready by the time the other mixture starts boiling. Then slowly pour it in the boiling mixture while constantly stirring so no lumps will form. I let it simmer for another minute before I remove the pudding from the oven and pour it in a glass container.

If you still happen to find any lumps in the pudding you can strain it through a mesh sieve and the result will still be a super smooth and silky pudding.

I sure hope you find this pudding as satisfying to make as I did! I couldn’t stop looking at that perfect color pink. All puddings looks gorgeous right? But they don’t all have a beautiful pink color like this one, which makes it very pleasing to the eyes as well as the mouth! lol

Ingredients
  

  • ½ cup granulated sugar
  • 4 Tbsp pink lemonade powder
  • 2 cups milk
  • 1 cup heavy cream
  • 4 Tbsp cornstarch
  • 2 Tbsp water

Instructions
 

  • In a medium saucepan, combine sugar, lemonade powder, and ½ cup heavy cream. Mix until everything is well combined then add the other ½ cup of heavy cream and the milk. Mix together.
  • Heat over medium heat, stirring constantly until mixture is starting to boil. Remove from heat.
  • In a separate bowl make a slurry of the corn starch and the water. Stir until the cornstarch is fully dissolved into the water.
  • Mix the slurry into the pudding mixture and continue to simmer for another minute while constantly stirring.
  • When the pudding starts to boil remove from heat and pour into a heat resistant container and cover with plastic wrap.
  • Let it cool to room temperature. Then store in refrigerator for up to a week.
